Fish cake

Cheap fish meat (Otollthus sp.) is used for preparation of cake. The ingredients are as follows:

  1. Fish meat -
  2. Starch (Boiled potato can be used) - 25 to 30%
  3. Spice powder - 1 to 3%
  4. Monosodium glutamate - 0.02 to 0.04%
  5. Salt - about 0.5 to 1%

Method of preparation:

  1. Wash the fish thoroughly. Remove the scales, head, tail, viscera and wash again.
  2. Treat the fish in 15% brine containing sodium hexametaphosphate and sodium tripolyphosphate (ratio 2:1) for 30 minutes.
  3. Steam the fish for 15 to 20, minutes. Remove the bones from cooked fish.
  4. Add starch, spice etc. in the proportion given above.
  5. Blend the whole material thoroughly in a blending machine without adding any extra amount of water.
  6. The kneaded material can be moulded into any desired shape and weight. Give a thin coating of starch by dusting the flour over the blending material.
  7. Pack the material in polythene paper.
  8. Quick freeze the product at about 340C.
  9. Store the product at 100 +- 500C. The product after deep frying in oil is found delicious.
