Fish cake
Cheap fish meat
(Otollthus sp.) is used for preparation of cake. The ingredients are as follows:
- Fish meat -
- Starch (Boiled potato can be used) -
25 to 30%
- Spice powder - 1 to 3%
- Monosodium glutamate - 0.02 to 0.04%
- Salt - about 0.5 to 1%
Method of preparation:
- Wash the fish thoroughly. Remove the
scales, head, tail, viscera and wash again.
- Treat the fish in 15% brine
containing sodium hexametaphosphate and sodium tripolyphosphate (ratio 2:1) for 30
minutes.
- Steam the fish for 15 to 20,
minutes. Remove the bones from cooked fish.
- Add starch, spice etc. in the
proportion given above.
- Blend the whole material thoroughly
in a blending machine without adding any extra amount of water.
- The kneaded material can be moulded
into any desired shape and weight. Give a thin coating of starch by dusting the flour over
the blending material.
- Pack the material in polythene
paper.
- Quick freeze the product at about 340C.
- Store the product at 100
+- 500C. The product after deep frying in oil is found delicious.
