Drumstick (Moringa Oleifera Lam.) a calcium and iron rich vegetable is generally used in preparing curries, sambar and rasam to enhance their flovour. Glumatic present in the pods imparts the characteristic flavour to the vegetable. However, use of drumsticks in the kitchen involves laborious exercises like scrapping the waxy fibrous surface, cutting etc. Also its use is limited to the season. Now, Central Food Technological Research Institute, Mysore has come out a process for manufacturing drumstick powder that can be kept on kitchen shelf and used with ease around the year like any other instant masala powder. The process involves cleaning and preparing the tender pods, drying, powdering and packing. The product finds use in preparing soups, instant soup powders, and as a thickening and flavouring agent in sambar, rasam and also parathas. Equipment required for setting up this small scale unit is indigenously available. |
